       White tea requires the lowest temperature of all tea types never exceed 185°F. Boiling water will destroy the delicate catechins and flatten the subtle grapefruit and floral notes.

       White tea leaves are large and fluffy use 1.5–2 tsp per 8 oz for a fuller, more flavorful cup.

       Steep 4–5 minutes to allow the Pai Mu Tan leaves to fully unfurl and release their complete flavor profile.

       Excellent for cold brewing: place 2 tsp in 8–12 oz cold water and refrigerate for 8–12 hours. Cold-brewed white tea is remarkably smooth and naturally sweet.

       Re-steep 2–3 times Pai Mu Tan's large leaves give excellent multiple infusions, each slightly different.
